No-Bake Chocolate Date Energy Bars: A Healthy Indulgence

Ingredients:

  • 1 cup pitted dates (softened in warm water if needed)
  • ½ cup almonds (or any nuts of choice)
  • ½ cup walnuts (or cashews)
  • ¼ cup unsweetened cocoa powder
  • 1 tbsp chia seeds (for extra fiber & omega-3s)
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil (melted)
  • A pinch of sea salt
  • Optional: ¼ cup dark chocolate chips (for extra indulgence)

Instructions:

Step 1: Blend nuts in a food processor until finely chopped.

Step 2: Add dates, cocoa powder, chia seeds, vanilla, coconut oil, and salt, then blend until a sticky dough forms.

Step 3: If too dry, add 1-2 tbsp warm water until it sticks together.

Step 4: Press the mixture into a lined baking dish to form an even layer.

Step 5: Optional: Melt dark chocolate and drizzle over the top.

Step 6: Refrigerate for at least 1 hour, then cut into bars.

Step 7: Store in an airtight container in the fridge for up to 2 weeks.

Tips:

Use Medjool dates: for extra sweetness.

Add protein powder: for a post-workout snack.

Sprinkle with shredded coconut: for extra texture.
