DELICIOUS SPANISH SCHNITZELS: Just 3 potatoes and 3 eggs for a perfect meal!

Traditional Spanish potato fritters, known as “Tortillitas de Patata,” are a delightful crispy and golden treat. Made from simple ingredients such as potatoes, onions, and eggs, these fritters are seasoned to achieve a perfect balance of flavors.

As a staple of Spanish cuisine, they make an excellent choice for an appetizer, snack, or side dish. Their crispy exterior combined with a soft and flavorful interior makes them an irresistible option for any occasion.

Required Ingredients:

For the fritters:

  • 3 medium-sized potatoes (about 500 grams), peeled and grated
  • 1 medium onion (about 150 grams), finely chopped
  • 2 large eggs, beaten
  • ½ cup (60 grams) all-purpose flour
  • 2 garlic cloves (optional), minced
  • 2 tablespoons finely chopped parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Olive oil, as needed for frying

How to Prepare Spanish Potato Fritters:

Preparing the potatoes and onions:

Grate the potatoes using a grater or food processor. Once grated, transfer them to a clean kitchen towel and squeeze out as much moisture as possible. In a large mixing bowl, combine the potatoes with the finely chopped onion.

Mixing the batter:

Add the eggs, flour, garlic (if using), parsley, salt, and black pepper to the potato-onion mixture. Stir until all ingredients are well combined, forming a thick and cohesive batter.

Heating the oil:

In a large pan, heat a generous amount of olive oil over medium heat.

Shaping and frying the fritters:

Take about two tablespoons of the mixture and shape it into a patty. Place the patties into the hot oil and gently flatten them with a spatula. Fry for 3 to 4 minutes on each side, or until golden brown and crispy.

Draining and serving:

Transfer the fritters to a plate lined with paper towels to absorb excess oil. Serve them warm with your favorite dipping sauce.

  • Use as a topping for sandwiches or burgers to enhance texture.
