ZUCCHINI AND BACON SLICE RECIPE: A simple, cheesy, and savory dish for any occasion!

Ingredients

  • Zucchini: 2 medium (about 400 g), grated
  • Bacon: 200 g (7 oz), chopped
  • Onion: 1 small, finely diced
  • Eggs: 5 large
  • Self-Raising Flour: 1 cup (150 g)
  • Cheddar Cheese: 1 cup (100 g), grated
  • Olive Oil: 1/4 cup (60 ml)
  • Salt and Pepper: To taste

Directions

Step 1: Prepare the Zucchini

Preheat your oven to 180°C (350°F).

Grate the zucchini and place it in a bowl. Sprinkle with a pinch of salt and let it sit for 5 minutes to release excess moisture. Squeeze out the liquid using a clean kitchen towel or your hands.

Step 2: Cook the Bacon and Onion

In a pan over medium heat, cook the chopped bacon until crispy. Remove from the pan and set aside.

In the same pan, sauté the diced onion until soft and translucent.

Step 3: Mix the Batter

In a large mixing bowl, beat the eggs.

Add the self-raising flour and whisk until smooth.

Stir in the grated cheese, olive oil, cooked bacon, sautéed onion, and grated zucchini.

Season with salt and pepper to taste. Mix until well combined.

Step 4: Bake the Slice

Line a baking dish (about 8×12 inches) with parchment paper or grease it lightly.

Pour the mixture into the prepared dish and spread it out evenly.

Bake in the preheated oven for 35-40 minutes, or until the top is golden and set.

Step 5: Serve and Enjoy

Let the slice cool slightly before cutting it into squares or slices. Serve warm or at room temperature.
